Breakfast Inspiration: Matcha Rawnola aka raw granola

Matcha Green Tea Rawnola ( aka raw vegan granola) 

Today I am bringing to you a guest recipe from an awesome yoga teacher and chef Yui Yamashita.
We share mutual love for yoga, plant-based recipes and anything made with matcha green tea. I have previously talked about exceptional health benefits of matcha in
this blog post so I asked Yui (who was born in Japan) to share a supercharged, easy and yummy matcha recipe with us and she kindly obliged. I hope you will like it as much as I do! 

This recipe is refined sugar-free, nut, gluten and dairy free, vegan and high raw. You can make it completely raw by using activated & dehydrated buckwheat. Enjoy! 

Over to Yui: 

Ingredients (preferably organic): 

2 cups raw buckwheat, slightly roasted in a frying pan on medium heat until it turns light golden colour
1/2 cup sesame seeds
1/2 cup sunflower seeds
1/4 cup chia seeds
1/2 cup melted extra virgin coconut oil
1 tablespoon matcha green tea powder
Pinch of sea salt 

 

Method:

Place all the ingredients except coconut oil in a large bowl.
Mix well and add the melted coconut oil and stir everything well together until everything is covered in gorgeous matcha green colour.
Place it on some baking paper and pop it in the fridge until it sets.
Keep it in a large mason jar or in a air-tight container and keep it in the fridge for up to 2 weeks.

You can add this yummy crunchy rawnola onto your breakfast bowls, your smoothies, with yogurt and fruits, or just on it’s own!
I love mine on top of nice creams (aka banana ice-creams), and smoothie bowls for it’s crunch and to boost the nutritional level. Matcha goes with any fruits and flavours - especially dark chocolate and berries are my favourite!

This recipe is totally sugar/sweetener free and you will taste the authentic bitterness of the matcha balanced with the natural sweetness of the coconut oil. 

There are no nuts, wheat or gluten in this recipe and it is packed with nutrient rich buckwheat and other seeds including the superfood chia seeds (high in omega 3, protein and fibre)!

About Matcha: 

Matcha green tea powder comes from traditional Japanese culture of tea ceremony back in the samurai period and very much connected with Zen Buddhism. The whole art of tea ceremonies are pure moving meditation and it has been practiced for over 900 years. This purest form of green tea is usually hand picked, dried out and stone ground giving this powder the highest antioxidant (5 times more) than any other food giving you beautiful and youthful skin, and catechin a specific type of antioxidant has cancer fighting properties.
It also boosts your concentration and memory, increases your energy, endurance and your immune system!
When you are choosing your matcha, look for a powder that is deep green, very fine powder and preferably from Japan.
